With 360 degree views of the Pacific Ocean and Los Angeles, High Rooftop Lounge has established itself as Southern California's premier rooftop destination. High Rooftop Lounge was voted Top 5 Best Hotel Bars in the county by USA Today and consistently tops various lists for best bars and best rooftops in Los Angeles.
The General Manager is responsible for fostering and developing an exciting, positive, results-based environment for the rooftop restaurant. The Restaurant Manager must be pro-active in providing hands-on operations and HR support to the staff via regular on the floor mentoring and coaching. Accurately completing administrative operations, HR, and payroll processes are also a key function of this role. As a member of the management team, this position is accountable for immediately notifying the Executive Team or HR of any reports or suspicions of harassment, discrimination, or retaliation. This position must carry out all management duties in accordance with Company guidelines, and state and federal law. Salary $85,000 - $100,000 yearly DOE

Responsibilities:
--- Reports directly to the Hotel General Manager
--- Organizes and directs the Rooftop operations to maximize profitability while upholding the company's values, policies, quality and guest experience standards
--- Builds and leads a high-performing team: sources and hires, effectively trains, motivates, evaluates, develops and retains talent
--- Oversees day-to-day operations, optimizing schedules and the deployment of the team to minimize labor costs and maximize sales
--- Ensures the team always offers a consistent, high level of service to all guests
--- Executes strategies around pricing, merchandising, new products and promotions aimed at increasing efficiencies and driving sales
--- Analyzes and takes responsibility for the financials of the Rooftop department with a focus on COGS and labor
--- Prepares weekly updates on the Rooftop department and collaborates inter-departmentally to plan activities and achieve all goals
--- Estimates food and beverage needs, and requisitions or purchases food, beverage, supplies, and equipment; receives and checks orders to ensure that they adhere to specifications
--- Assists with colleague payroll and scheduling.
--- Coordinate daily pre-shift to communicate daily specials and offerings
--- Actively manage the F&B operations, quality of service and interact with guests and staff during operations
--- Follow-up with unsatisfied guests and handles complaints
--- Assist with Special Events coordination, set-up and management
--- Maintain compliance with departmental policies, procedures, and standards
--- Assist with completing daily, weekly, and monthly management administrative duties including operations reports, financial documentation, guest correspondence, human resources / staff management paperwork, operations evaluations, standard operating procedures, safety and sanitations checklists, ordering and inventory documentation, and PR/marketing tasks.

  • Protect establishment and patrons by adhering to sanitation, safety and alcohol control policies. This includes any COVID Guidelines/Protocols as applicable to location.

    Skills/Knowledge Required:
    • Night Club / Lounge high volume experience required
      --- Strong liquor, wine & beer knowledge required
      --- Strong written, verbal, and non-verbal communication skills
      --- Proactive attitude with strong organizational and time management skills
      --- The ability to motivate and inspire others to work cooperatively to achieve a designated goal
      --- Flexible schedule - Willing and able to work shift duties that will include evenings, nights, weekends and holidays
      --- Strong problem-solving skills

      Physical/Mental Abilities
      a.--Ability to speak, see, hear, read, and write English.
      b.--Mobility and manual dexterity.
      c.--Ability to walk extensively, bend, stoop, stretch, push pull for up to 8 hours a day.
      • Standing for extensive periods of time.
        e.--Must be able to regularly lift and/or move up to 40 pounds.
        f.--Ability to read, interpret, and understand an extensive variety of work related instructions and documents for Company operations, safety, finance, HR, and payroll Responsibilities QUALIFICATIONS:
        • At least 5 years of progressive experience in a hotel or a related field a 2-year college degree and 3 or more years of related experience. Or a 4-year college degree and at least 1 to 2 years of related experience or a Culinary Degree with 1 to 2 years of progressive experience in a hotel or related field.
        • Holds and maintains applicable certification requirements for position to include: Food Handlers Alcohol Awareness CPR and First Aid
        • Must be proficient in Windows operating systems Company approved spreadsheets and word processing.
        • Extensive experience in restaurant bar banquet catering in room dining and kitchen management required.
        • Must be able to convey information and ideas clearly.
        • Must be able to evaluate and select among alternative courses of action quickly and accurately.
        • Must work well in stressful high pressure situations maintaining composure and objectivity under pressure.
        • Must be effective in handling problems in the workplace including anticipating preventing identifying and solving problems as necessary.
        • Must have the ability to assimilate complex information data etc. from disparate sources and consider adjust or modify to meet the constraints of the particular need.
        • Must be effective at listening to understanding clarifying and resolving the concerns and issues raised by co-workers and guests.--
        • Must be able to work with and understand financial information and data and basic arithmetic functions. Have the ability to analyze forecast data and make judgments to ensure proper payroll and production control
        • Familiar with the general organization of a Hotel and know the function of each department.
        • Communicates in a timely and efficient manner possess strong communication skills excellent speaking reading and writing skills computer skills and basic technological acumen.
        • Knowledge and experience with forecasting budgeting labor management and purchasing to ensure maximum productivity
        • Must be able to complete all applicable forecasting and budgeting in a timely and efficient manner.
        • Maintain a professional working relationship and promote open lines of communication with managers employees and other departments.
        • Knowledgeable and aware of local competition and industry trends.-- RESPONSIBILITIES:
          • Responsible for organizing directing supervising and assisting in the preparation and service of all food and beverage based on standardized recipes for the Restaurant Room Service Market Employee Cafeteria and Banquets while maintaining the highest standards to produce an appealing and appetizing product.
          • He/she is also responsible for ensuring the cleanliness sanitation and safety in the kitchens service stations FOH BOH work and storage areas while minimizing waste and maximizing cost/production ratio.
          • He/she plans meals and service while directing and guiding the Chef with various assignments i.e. pricing banquets etc.
          • This role is ultimately responsible for providing oversight of the kitchen staff outlets banquet food display merchandising and operations of the kitchen service beverage and banquet departments as required.
